Try this Chili Garlic Chicken

Fellow curry lovers๐Ÿ›๐Ÿฅ˜ This time I would like to share this recipe of Indian Chili Garlic Chicken so that you can prepare this cuisine yourself at home!

Ingredients

Pre-cooked chicken

  • 1 kg chicken pieces
  • 3 tablespoon vegetable oil
  • 5 cardamom pods
  • 10 black peppercorns
  • 1 inch piece of cassia bark or cinnamon stick
  • 1 teaspoon cumin seeds
  • 2 finely chopped large onions
  • 400ml chopped tomatoes
  • 3 bay leaves
  • 1 teaspoon turmeric
  • Salt

Chili Garlic Chicken

  • 3 teaspoon canola oil
  • 8 garlic cloves (cut into thin slivers)
  • 1/2 finely chopped onion
  • 1 teaspoon garlic and ginger paste
  • 2 (or more) fresh green chilies, sliced into thin rings
  • 1 teaspoon chili powder
  • 1 teaspoon mixed powder or curry powder
  • 1 teaspoon tandoori masala
  • 1/4 cup tomato purรฉe
  • 1 1/4 cups heated base curry sauce
  • 300g tandoori chicken tikka
  • 1 handful of dried garlic flakes (optional)
  • 1 teaspoon dried fenugreek (methi) leaves
  • 2 teaspoon chopped coriander (cilantro)
  • Juice of one lime (optional)
  • Salt

Methods

Pre-cooked chicken

  1. Heat the oil over a medium-high flame.
  2. Add all the spices and bay leaves to the oil.
  3. Keep stirring to prevent the spices from burning.
  4. Add the chopped onions.
  5. Stir well.
  6. Keep stirring from time to time for about 10 minutes, stirring until the onions become soft and transparent.
  7. Add a little bit of salt.
  8. Add the turmeric and mix the ingredients.
  9. Pour in the chopped tomatoes and cover the pot.
  10. Add the chicken pieces and water that is able to cover the chicken after about 10 minutes.
  11. Cover the pot again and simmer the chicken until it is cooked through.
  12. Remove it from the heat and let’s prepare for the next step๐Ÿ˜‰

Chili Garlic Chicken

  1. Heat the oil over a medium flame.
  2. Add in the garlic and make sure you do not burn the garlic.
  3. Add the onion and fry for about 3 minutes until it becomes soft and clear.
  4. Add garlic, ginger paste and chilies and fry for about 20 seconds.
  5. Increase the heat to medium-high.
  6. Cook for another 30 seconds after adding the ground spices and tomato purรฉe.
  7. Keep stirring.
  8. Add one or two ladles of the base curry sauce and bring it to a rolling simmer.
  9. If the curry is too dry, add more base. If the curry is too soupy, cook it until the curry becomes thicker.
  10. Add the pre-cooked chicken and coat with the sauce.
  11. Keep simmering and add fenugreek leaves.
  12. Have a taste to check for seasoning.
  13. Sprinkle the curry with coriander and add the lime juice.
