How to Cook Malaysian Style Chicken Rendang

 

Chicken Rendang is a spicy stewed dish that originated from Indonesia. However, it has become a classic stew dish and is well known among Malaysians.

This article will briefly introduce the approach to cooking Malaysian-style Chicken Rendang.

Ingredients

Rendang paste

  • 1 inch ginger
  • 1 inch galangal
  • 3 stalks lemongrass (White part only)
  • 10 pieces (about 10g) dried chili
  • 80g fresh red chili
  • Water (blend the ingredients)

Others

  • 1kg chicken
  • 1 teaspoon salt
  • 1 cup (85g) toasted grated coconut, which is kerisik
  • 1 cup (250ml) coconut milk
  • 1 cinnamon stick
  • 1 star anise
  • 4 cloves
  • 15g palm sugar
  • 1 piece Asam keping
  • 1/2 teaspoon white pepper
  • 1 turmeric leaf

Tools

  • Blender / food processor
  • Pan / pot
  • Spatula

Methods

  1. Cut the chicken into large chunks.
  2. Season the chicken with salt and set it aside for 30 minutes to marinate.
  3. Cut the ginger, galangal, lemongrass, chilies, and dried chilies into small pieces.
  4. Remember to remove the chilies and dried chilies’ seeds.
  5. Boil the dried chilies in water for 10 minutes.
  6. Remove it from the water.
  7. Blend all the ingredients for rendang paste with a blender or food processor.
  8. Use some oil to cook the kerisik in a pan until the kerisik turns to light yellow. Set is aside.
  9. Stir-fry the rendang paste over low heat until aromatic.
  10. Add the other ingredients (except Asam Keping) into the pan.
  11. Slowly simmer the ingredients for 20 minutes.
  12. Add kerisk and Asam keping. Simmer it for another 10 minutes.
  13. Done 🙂
